An avocado toast that works for any day, any time

To us, simple cooking is not dumbed down food. It’s beautiful, fresh, delicious, and colorful. Sometimes, simple ideas can be quick (but not always). But luckily, it’s the case with this avocado toast with egg. It’s got a few little tweaks that takes it beyond just mashing avocado onto toast. This recipe is a creative idea for what to eat in less than 15 minutes and prove that you can do a lot with a little. This avocado toast would be perfect for:

The secret: how to make bright yellow turmeric eggs!

What takes this easy avocado toast beyond the standard? Turmeric poached eggs! What’s a turmeric egg? It’s an egg poached with turmeric stirred into the water. What emerges is a beautiful bright yellow orb that looks infinitely more exciting than a normal poached egg! Making a turmeric eggs only takes a couple minutes, but it’s a lovely addition to anything: avocado toast, a grain bowl, or a big salad. Here’s how to make turmeric eggs:

  • Bring water to boil in a large saucepan, then add 2 teaspoons of turmeric and a splash of white vinegar. Reduce to a gently simmer.
  • Crack an egg into a small bowl, then slide it into the water. Do the same with the next egg, them simmer 3 minutes.
  • Remove the eggs with a slotted spoon to a plate lined with a paper towel. That’s it! Beautifully brilliant bright yellow turmeric eggs.

A few more elements make this avocado toast with egg go from humble to fancy. Here’s what we recommend:

  • Use a great bread. Don’t use any old bread for this one. A slice of crusty artisan bread is key. Grab it at the store, or use our Homemade Sourdough, Artisan Dutch Oven Bread, or Multigrain Artisan Bread.
  • Top with julienned radishes for color. Add radishes sliced into long thin batons to give a pop of colorful confetti.
  • Sprinkle with black sesame seeds and sea salt. For a final detail, black sesame seeds look elegant as a garnish.

Make it a meal!

If you’re serving this avocado toast with egg as a vegetarian dinner, we’d leave an option for two pieces per person and make sure to include a few other side dishes. Accessorize with a simple green salad (like this arugula salad) or hummus with veggies.

For the turmeric poached egg*

  • ¼ cup distilled white vinegar
  • 2 teaspoons ground turmeric
  • 2 large eggs

For the avocado toast

  • 2 thick slices artisan bread or Homemade Bread
  • 1 avocado
  • 1 to 2 radishes
  • Black sesame seeds
  • Chunky sea salt

Instructions

  1. In a large saucepan, pour a few inches of water and bring it to a boil. Reduce to a gentle simmer and stir in the vinegar and turmeric.
  2. Crack an egg into a small bowl, then gently slide the egg into water. Wait about 30 seconds, then add the next egg. Allow to simmer for about 3 minutes, until the whites are set but the yolks are runny. 
  3. Line a plate with a paper towel. Remove the eggs from the pan using a slotted spoon, then allow them to drain while preparing the toast. (Throughout the process, take care with the turmeric water, as it can stain clothing.)
  4. Remove the avocado pit, scoop it out of the peel, and mash it with some salt using a fork. Spread it on the bread slices, then top with the egg, radishes, sesame seeds, and sea salt.

  1. Uh? What to do with the egg after #3? No instructions with the egg in #4. The egg was laid to rest on the paper towel. “Remove the avocado pit, scoop it out of the peel, and mash it with some salt using a fork. Spread it on the bread slices, then top with radishes, sesame seeds, and sea salt.” But, what about the egg?
