20 Rhubarb Recipes for the Season

Description

This rhubarb crisp recipe has a golden, crunchy crumble topping and a gooey, sweet tart filling. It’s just the best!


Ingredients

  • 2 pounds rhubarb (6 cups chopped)*
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • ¼ teaspoon orange zest (optional; or ½ teaspoon lemon zest)
  • 2 teaspoons vanilla extract
  • ¾ cup Old Fashioned rolled oats
  • ¾ cup all purpose flour (or almond flour for gluten-free)
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • 8 tablespoons cold salted butter (or coconut oil or vegan butter for vegan)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Make the filling: Chop the rhubarb into ½ inch pieces. Mix it with the granulated sugar, cornstarch, orange zest and vanilla extract in a bowl, then pour the filling into a round 9-inch pie pan, 9 x 9 inch baking dish or 7 x 11 baking dish.
  3. Make the topping: In a medium bowl, mix together the oats, flour, sugar, cinnamon, and kosher salt. Cut the butter into small pieces and then use your hands to mix it into the oats until fully distributed and a crumbly dough forms. It may take a while so be patient; you can also use a fork or pastry cutter if you prefer. (If using coconut oil, it can be room temperature; use the same method to add it.) Pour the crumble on top and smooth it into an even layer with your fingers.
  4. Bake: Bake for 45 to 50 minutes until the top is evenly golden brown and the filling is bubbly. Cool for 30 minutes to 1 hour, then serve warm. You can leave out your crisp on the counter for up to 1 day (covered, at night) so the crisp topping can stay crisp. After 1 day, refrigerate any leftovers. This crumble also freezes well for several months in a sealed container; reheat it in a 350 degree oven until bubbly and the topping is crisp.

Notes

*For a strawberry rhubarb crisp, simply use 1 pound (3 cups sliced) strawberries with 1 pound (3 cups chopped) rhubarb.

Description

This baked asparagus is an easy side dish that’s a hit with everyone! The green stalks are roasted until tender, spritzed with lemon & topped with Parmesan.


Ingredients

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • Fresh ground black pepper
  • 1 lemon (Zest from half, plus slices from the other half)
  • ½ cup shredded Parmesan cheese (omit for vegan)

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Cut off the tough bottom ends of the asparagus. Add the asparagus stalks to a foil-lined baking sheet. Drizzle them with olive oil, and add the kosher salt and a few grinds of black pepper. Add the zest of ½ lemon and mix with your hands. Thinly slice 4 lemon wheels from the lemon, then add them right on the tray. Sprinkle everything with Parmesan cheese.
  3. Bake 10 to 15 minutes, until tender when pierced by a fork at the thickest part. The timing will depend on the thickness of the asparagus spears (ours in the photo were done at 12 minutes). Serve immediately.

Why not to make roasted kohlrabi?

Roasting vegetables typically brings out a sweet and tender flavor. You’d think that roasted kohlrabi is a natural way to use cook it: right? Unfortunately, roasted kohlrabi isn’t the best way to highlight this vegetable. It comes out bland and squishy, a much less satisfying bite than the hydrating crunch of its raw self.

Roasted kohlrabi tastes a bit like roasted turnips (which we don’t love either). Even when we doused it in butter and Parmesan cheese, it still didn’t taste great. All three of us in this household gave it 2 thumbs down. So we recommend using kohlrabi in raw preparations (or those fritters, above). You’ll be glad you did!

This eating philosophy originated based on the longevity of people in the Mediterranean, and researchers observed more than just eating habits. Ingredients

  • 15-ounce can chickpeas, drained and rinsed (or 1 ½ cups cooked)
  • 2 medium sweet potatoes (1 ½ pounds), diced into half-inch cubes
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt, divided
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon ground coriander
  • ¼ teaspoon cinnamon
  • 1 cup quinoa (or 1 cup couscous)
  • 1 pint cherry tomatoes, sliced in half
  • 1/2 English cucumber, sliced into half moons
  • Mixed salad greens, for serving
  • 1 recipe Lemon Tahini Dressing

Instructions

  1. Preheat the oven to 425°F. Line two baking sheets with parchment paper.
  2. In a large bowl, combine the chickpeas, sweet potatoes, red pepper and red onion. Toss with the olive oil and 1 ½ teaspoons of the kosher salt. Then toss with the cumin, paprika, garlic powder, coriander, and cinnamon. 
  3. Divide the vegetables evenly between the two baking sheets and spread in an even layer. Roast for 20 minutes, then remove from the oven and stir. Roast another 5 to 10 minutes until the sweet potatoes are tender.
  4. Meanwhile, cook the quinoa (or make Easy Couscous): Rinse the quinoa in cold water using a fine mesh strainer, then drain it and shake out the remaining water. Place it in a saucepan with 1 ¾ cups water and ¼ teaspoon kosher salt. Bring to a boil, then reduce the heat to low where the water is just bubbling. Cover the pot and simmer where the water is just bubbling for about 15 to 18 minutes, until the water has been completely absorbed. Check by pulling back the quinoa with a fork to see if water remains. Turn off the heat and let sit with the lid on to steam for 5 minutes, then fluff the quinoa with a fork. 
  5. Make the Lemon Tahini Dressing.
  6. To serve, place the roasted vegetables over the couscous and salad greens in shallow bowls. Add piles of fresh cucumbers and tomatoes. Drizzle with the dressing and serve.

This stuffed zucchini boats recipe has a hearty filling topped with gooey cheese. It’s a tasty dinner idea that pleases everyone!


Ingredients

  • 4 medium zucchini
  • Olive oil, for rubbing
  • ¾ teaspoon kosher salt, divided
  • Fresh ground black pepper
  • 1 teaspoon dried oregano, divided
  • 14 to 16 ounces plant based sausage, crumbles, or standard Italian sausage (or substitute 2 cups Vegan Taco Meat)
  • 2 garlic cloves
  • 15-ounces fire roasted crushed tomatoes**
  • ¼ teaspoon fennel seeds
  • 6 tablespoons grated or shredded Parmesan cheese, divided
  • ½ cup whole milk mozzarella cheese
  • 2 tablespoons Italian seasoned panko (or plain panko; omit or use gluten-free breadcrumbs for gluten-free)
  • 1 tablespoon fresh basil or parsley, chopped

Instructions

  1. Preheat the oven to 425°F.
  2. Cut off the stem ends of the zucchini. Cut them each in half lengthwise and scoop out the insides with a spoon: you’ll want a thin edge around the outside of the boat. (Discard the pulp, or use it in smoothies or for another purpose.) Place the boats on a baking sheet and rub each with a bit of olive oil. Then sprinkle all 8 boats with a heaping ¼ teaspoon salt, ½ teaspoon oregano and fresh ground black pepper, divided between the boats. 
  3. Place the sausage in a medium skillet and cook according to the package instructions, 2 to 3 minutes for plant-based and 6 to 7 for regular sausage (for regular sausage, drain any excess fat after cooking). Add the garlic to the pan with the sausage and cook 30 seconds, then add the tomatoes, fennel seed, ½ teaspoon dried oregano, ½ teaspoon kosher salt, and ¼ cup Parmesan cheese. Heat for 1 minute until warmed through. 
  4. Scoop the filling into the zucchini boats. Top with the mozzarella cheese and the remaining 2 tablespoons Parmesan cheese. Then sprinkle with the panko. 
  5. Bake for 20 minutes until the cheese is melted and golden brown. Let stand for 2 minutes before serving. Leftovers store up to 3 days refrigerated. 

Notes

*For plant-based crumbles or sausage, we like Impossible or Beyond (we used Impossible sausage here). For a homemade version, try Vegan Taco Meat: omit the cumin and use ½ tablespoon dried oregano.

**Fire roasted tomatoes add the best flavor here: they taste sweet and smoky right out of the can. If you can’t find them, substitute best quality tomatoes with 1 teaspoon sugar and ½ teaspoon smoked paprika. Or, use 1 ½ cups best quality marinara sauce.

Description

This easy corn salad is fresh and full of tangy flavor, with bursts of bright tomato and basil! The classic summer salad for BBQs and picnics. You can also make it grilled! Go to Grilled Corn Salad.


Ingredients

  • 6 cobs corn (about 5 cups kernels, or 3 15-ounce cans corn)
  • ½ pint (1 cup) cherry tomatoes
  • ½ cup diced red onion
  • ⅓ cup roughly chopped fresh basil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • ½ teaspoon kosher salt
  • Fresh ground black pepper
  • ½ cup feta cheese crumbles, for garnish (optional)

Instructions

  1. Cook the corn: Bring a large pot of water to a boil. (This takes about 15 to 20 minutes, so plan accordingly.) Shuck the corn, removing the silk. When the water is boiling, place the corn cobs in the pot. Boil covered for 4 minutes, until bright yellow. Run under cool water until cool enough to touch. (Alternate method: Roast the corn in the oven or use canned corn.)
  2. Cut the corn: Find a bundt pan, or large rimmed baking sheet or pan. Place the corn into the hole in the bundt pan or hold the corn vertically inside the baking sheet, then use a chef’s knife to slice down and remove the corn from the cob (the sides of the pan catch the kernels that fly when cutting; more details here.)
  3. Chop the vegetables: Meanwhile, dice the cherry tomatoes. Finely chop the red onion. Chop the basil.
  4. Mix in the dressing: In a large bowl, mix all vegetables with the apple cider vinegar, olive oil, garlic powder, chili powder, salt, fresh ground black pepper to taste, and optional feta crumbles. Stores refrigerated for up to 3 days.

Description

Roasted yellow squash is the perfect way to serve it! This easy method bakes summer squash with Parmesan and Italian herbs.


Ingredients

  • 2 pounds squash (about 4 to 5 medium small)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon kosher salt 
  • ½ cup shredded Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Slice the squash into 1/4-inch thick rounds. In a large bowl, mix them with the olive oil, garlic powder, onion powder, oregano, basil, and kosher salt.
  3. Line two baking sheets with parchment paper. Place the vegetables in a single layer on the baking sheets. Roast for 8 minutes.
  4. Remove the baking sheets from the oven and sprinkle evenly with the shredded Parmesan cheese. Return the sheets to the oven (on the opposite oven racks) and bake another 10 to 12 minutes until tender and the cheese is melted. Taste and add additional salt as necessary (we usually add another sprinkle). Serve immediately.

Got a bottle of Aperol and not sure how to use it? Everyone’s favorite Aperol Spritz is the most popular way to use it, but never fear: there are so many other ways! Mix it into the modern classic Paper Plane with bourbon, or combine it with pineapple and rum for a refreshing fruity drink. You can even pour it into beer for a refreshing spin on the spritz (yes, it’s a thing!).

More about Aperol

Aperol is a Italian aperitif, a liquor designed for sipping before a meal. It was invented in Padua, Italy in 1919 by brothers Luigi and Silvio Barbieri. The company that sells Campari, Gruppo Campari, bought Aperol in the 1990s.

Aperol is bright orange in color and it has a sweet, citrusy flavor. It’s more approachable than its cousin liqueur Campari, which is bright red and extremely bitter (see Campari vs Aperol). It’s great in the popular spritz, or even just watered down with soda water.

Compared to other liquors, Aperol is mid-priced. A 750 ml bottle costs $20 to $35.

Description

The classic Aperol spritz is worth the hype! It’s light and bubbly, with hints of citrus and herbs: one of the most refreshing mixed drinks of all time.


Ingredients

  • 2 ounces (4 tablespoons) Aperol, chilled
  • 3 ounces (6 tablespoons) Prosecco or other sparkling wine, chilled
  • 1 ounce (2 tablespoonssoda water
  • Ice (try clear ice!)
  • For the garnish: orange wedge, a straw if you like

Instructions

  1. Add the Aperol to a glass filled with ice and stir. Top with the sparkling wine and soda water.

Description

This summer salad recipe is the best way to enjoy the season! Pair burrata or fresh mozzarella with summer fruit and fresh tomatoes.


Ingredients

  • 1 to 2 4-ounce balls burrata cheese or fresh mozzarella cheese
    Summer fruit: heirloom tomatoes, ripe peaches, watermelon, cantaloupe or honeydew, berries, etc (we used 2 peaches and 1 handful cherry tomatoes)
  • 1 handful fresh basil leaves and thyme sprigs
  • Extra virgin olive oil
  • Chunky sea salt

Instructions

  1. Place 1 ball of cheese on the plate.
  2. Surround it with the summer fruit (sliced tomatoes or peaches, or berries).
  3. Top with torn basil leaves and other herbs. If desired, add torn pieces of another ball of cheese to add texture and visual appeal.
  4. Drizzle with olive oil and sprinkle with chunky sea salt. Serve immediately.

Description

This breakfast scramble is the ultimate easy breakfast idea! It’s got lots of colorful veggies to start the day right (and a vegan option).


Ingredients

  • 2 tablespoons olive oil
  • 1/2 red onion
  • 1 red bell pepper (or 1/2 red and 1/2 orange)
  • 4 cups baby kale or spinach
  • 1 tablespoon chopped chives or other fresh herbs
  • 4 eggs or this Tofu Scramble
  • ¼ cup shredded Colby cheese or crumbled goat cheese (optional)
  • ¼ teaspoon kosher salt
  • Fresh ground black pepper
  • Avocado slices, for serving

Instructions

  1. Prep the vegetables: Thinly slice the red onion. Large dice the bell pepper.
  2. Prep the eggs or tofu: In a medium bowl, crack the eggs and whisk them together until well-beaten. Stir in the shredded cheese, fresh herbs, kosher salt, and plenty of fresh ground pepper. Or, complete Step 1 of the Tofu Scramble.
  3. Cook the vegetables: Heat the olive oil over medium high heat. When hot, add the onion and peppers. Cook 3 to 4 minutes until tender and just starting to brown, stirring occasionally. Reduce heat to low. Add a pinch of salt and the baby greens. Cook for 30 seconds until wilted. Remove and set aside.
  4. Cook the eggs or tofu: Keep heat on low. Pour in the eggs. Cook for 20 to 30 seconds. When the eggs just start to set, use a flat spatula to scrape sections of eggs, gently stirring constantly until cooked but still soft, about 1 minute. Or, complete Step 2 of the Tofu Scramble.
  5. Add the vegetables and serve: Add the veggies back to the pan with the eggs or tofu. Stir for a few seconds until combined and warmed. Serve immediately.
