  • Use just enough water until the sauce comes together. Stir all ingredients together, then use just enough water so that it comes together. It all depends on the peanut butter, but typically we use 3 to 4 tablespoons.

For the hot sauce

The hot sauce in this peanut sauce recipe is optional, but it adds more than just heat! Our favorite here is sambal oelek, which adds a funky nuance to the flavor. The 1 teaspoon specified in the recipe below makes for a very mild peanut sauce. If you’d like, add more to make a spicy peanut sauce! Here are a few options for the hot sauce:

  • Sambal oelek: This Indonesian chili sauce is our top choice here; it’s made of chili peppers, garlic, ginger and lime. It has a chunky texture and little to no sugar.
  • Chili garlic sauce: It’s similar to Sambal oelek but with a thicker texture, made with more ingredients and more of a garlicky flavor.
  • Sriracha: You can also use Sriracha here! Sriracha is a hot sauce that originated from Thailand made of chile peppers, vinegar, garlic and sugar

Storage info

This peanut sauce recipe lasts 2 weeks refrigerated. However, keep in mind that the texture becomes solid when cold. Since it’s mainly made of peanut butter, it solidifies in the refrigerator like a jar of peanut butter would.

Before serving from the refrigerator, allow the peanut sauce to come to room temperature. If it is still very thick, whisk in ½ teaspoon or so of warm water until the sauce comes to a creamy consistency.

Rhubarb sauce is similar to any fruit sauce: you simply cook down the fruit with sugar on the stovetop until it breaks down and becomes saucy. Here’s what to do:

  • Dice the rhubarb. You can use any amount you like! This recipe uses one pound, which we pair with ¾ cup granulated sugar.
  • Cook the rhubarb with sugar and water on the stovetop. Cook over medium heat and allow the sauce to bubble and break down. It takes about 10 to 12 minutes, depending on the exact heat and the size of the rhubarb pieces.
  • Remove from the heat, and add lemon juice and vanilla. We also like adding a bit of brown sugar to add complexity to the flavor.

This roasted red pepper sauce is similar to a romesco sauce, that Spanish sauce made with red peppers, , olive oil, almonds, and garlic. In fact, it has almost the same ingredients: but this sauce has more red peppers and is lighter in texture. You’ll use an entire 16-ounce jar of roasted red peppers, but it’s worth it for the luxurious texture and flavor. Here’s what you’ll need:

  • Jarred roasted red peppers
  • Unsalted almonds
  • Olive oil
  • Garlic
  • Lemon juice
  • Smoked paprika
  • Kosher salt
  • Optional: heavy cream, grated Parmesan cheese

  1. Canned fire roasted tomatoes: Try to find this type of canned tomato if at all possible! Roasting tomatoes over an open flame brings a mellow, sweet flavor right out of the can. Several brands carry this special type of tomato that’s become widely available. If you can’t find them, use the highest quality crushed tomatoes you can find.
  2. Small garlic clove: Garlic cloves widely vary in size. This recipe calls for a small clove — if you don’t have one, use half a medium or a quarter of a large clove (see the video below if you need a hint on sizes). This is important so the sauce doesn’t end up too garlicky.
  3. Dried oregano: Make sure to use dried oregano that’s fairly new so that the flavor is strong enough. If it’s been in your cabinet over 1 year, it’s time for a refresh!
  4. Olive oil: Use extra virgin olive oil. Always.
  5. Salt. No recipe is complete without salt (we always use kosher salt: here’s why).

How to make homemade pizza sauce? Many methods simmer the sauce on the stovetop. But after loads of testing, we found that fire roasted tomatoes make it possible to mix right up without cooking. Every time we make it, when I dip my spoon into that beautiful red sauce, it’s beyond my wildest dreams. We used to make it in a blender, but we’ve found it works simply mixed by hand too! Here are the steps:

  • Mince or peel the garlic. Finely mince the garlic. Or if you’re using the blender method, peel the garlic clove and slice it into a few rough pieces.
  • Mix everything (or blend)! Mix everything together in a bowl until the olive oil incorporates. Or, throw in the garlic with fire roasted tomatoes, olive oil, oregano, garlic and salt, then blend them up until fully combined. It’s as simple as that. Take a taste, and…well, you’ll be amazed by the flavor! We’ve had countless people tell us that it’s the best pizza sauce they’ve ever had.

Make toasted pine nuts on the stovetop when you have a small quantity of nuts and want to make them quickly. Just a few minutes in a hot pan, and the flavor is even warmer and nuttier. Here’s what to know:

  • Pros and cons: This method is fast and it takes only 3 minutes! However, toasting nuts on the stovetop can cook unevenly, and it’s harder to toast large quantities.
  • How to do it (go to recipe): Place the nuts in a dry skillet (don’t add oil!). Heat over medium heat for about 3 minutes, until golden and fragrant. Do not leave the stove because the nuts can burn very easily.

Make toasted pine nuts in the oven when you have time to preheat the oven! Choose this method if you want to make more than 1 cup toasted pine nuts.

  • Pros and cons: This method cooks the nuts more evenly than the stovetop method, and you can cook lots of nuts at once. It does take longer to cook, and you’ll need to wait for the oven to preheat first.
  • Basic oven method (go to recipe): Preheat to 350°F. Place the nuts in a single layer on a baking sheet, then bake 5 minutes until golden and fragrant. Don’t leave the oven unattended because they can burn easily.

Here’s a whole grain that’s just about as versatile as your favorite pair of shoes: Quinoa! This seed from the Andes had a meteoric rise to popularity in the US: because it’s fluffy, tasty, and fun to make into side dishes, salads and bowl meals. But here’s the thing: quinoa can be tricky to cook. It’s easy to come out soggy and waterlogged. So here’s how to cook quinoa: a trick that makes it come out fluffy every time!

All about quinoa

Quinoa (KEEN-wah) is a South American grain that was first grown for food 7,000 years ago by the Incas in the Andes. It’s actually the seed of the Chenopodium quinoa plant, so it’s known as a “psuedograin” since it’s eaten in the same way as whole grains.

Quinoa is gluten-free and high in protein, calcium, Vitamin B, and iron. In fact, the Incas believed the food was sacred, because eating it regularly appeared to provide a long, healthy life. There are several types of quinoa, including:

  • White
  • Red
  • Black
  • Tri Color (a mix of the three above)

How to cook quinoa

Most recipes for quinoa suggest a ratio of 1 cup quinoa to 2 cups water. After extensive testing, we’ve found it’s easy to get soggy grains with this method. So we’ve developed a new quinoa to water ratio: try 1 cup quinoa to 1 ¾ cups water. Simmer it up, and it makes for fluffy grains that aren’t waterlogged. Here’s how to cook quinoa:

  • Rinse the quinoa. Rinse it in cold water using a fine mesh strainer, then shake off the water. Why rinse quinoa? It reduces bitterness (it helps to remove the natural coating called saponin) and in our experience, helps it cook more evenly.
  • Simmer covered for 15 to 18 minutes. Place 1 cup quinoa with 1 ¾ cups water in a saucepan with ¼ teaspoon kosher salt. Bring to a boil, then reduce the heat to low. Cover the pot and simmer where the water is just bubbling for about 15 to 18 minutes, until the water has been completely absorbed. Check by pulling back the grains with a fork to see if water remains.
  • Allow to sit covered for 5 minutes. Turn off the heat and let sit with the lid on to steam for 5 minutes, then fluff the grains with a fork.

How long to cook quinoa?

One more note on cook times! How long to cook quinoa varies depending on how much of the dry grain in the pot at one time and how high the heat is.

  • 1 cup dry quinoa usually takes between 15 and 18 minutes to cook at a gentle simmer.
  • 1 ½ cups to 2 cups dry quinoa may take between 17 and 20 minutes to cook.

It adds tangy umami to every bite! Luckily it takes literally 2 minutes to make: and it stores in the fridge for months. Here’s how to make it.

Ingredients in spicy mayo

Spicy mayo is just two main ingredients: mayonnaise and Sriracha! This popular tangy hot sauce originated in Thailand and is made of chile peppers, vinegar, garlic and sugar. You can whip up this sauce in just 1 minute to add umami and richness to so many different foods. It comes out so full of flavor! Here’s what you’ll do:

  • Start with ½ cup mayonnaise. Use any type of mayo. Vegan mayo works, or use Kewpie mayo to make spicy mayo for sushi.
  • Stir in 1 ½ tablespoons of Sriracha hot sauce. Taste and see if you’d like it hotter. Experiment with a range of 1 tablespoon (fairly mild) to 2 tablespoons (solidly spicy). If you’d like it even spicier, go ahead!

If you’d like, you could also add 1 teaspoon soy sauce to bring out a savory flavor, or lime juice to bring out a tangy flavor. Neither are required, but they add an additional dimension.

Types of hot sauce

Use different hot sauces to change up spicy mayo to fit your dish or what’s in your pantry! Here are a few alternative hot sauces to use instead of Sriracha:

  • Mexican-style hot sauce: Substitute Cholula or another Mexican-style hot sauce for the Sriracha.
  • Chili garlic sauce: It’s similar to Sriracha but with a thicker and chunkier texture, made with chilies and lots of garlic. It tastes a little brighter than Sriracha and has more nuance.
  • Sambal oelek: This hot sauce is an Indonesian chili sauce made of chili peppers, garlic, ginger and lime. It has a chunkier texture and little to no sugar.
  • Gochujang: Use Korean Gochujang instead of Sriracha for a nuanced, funkier spicy mayo.
  • Frank’s hot sauce: You can also use this hot sauce to make an American-style spicy mayo that’s great for burgers and fries.

When you stir together the sauce, it will be slightly runny in texture. This works perfectly as a drizzle for bowl meals like a Poke Bowl. If you’d like the texture to be thicker, refrigerate it for about 2 hours until it’s cold. Spicy mayo stores for about 3 to 4 months refrigerated, so you can make up a big batch and then use it when the craving strikes!

This balsamic vinaigrette recipe is very simple to whip up, especially because you might already have the ingredients on hand in your pantry. For this recipe you’ll need:

How to make balsamic vinaigrette dressing

This balsamic vinaigrette recipe is incredibly simple. The flavor is zesty and bright, tangy from the vinegar, balanced with a touch of maple syrup. Then of course it’s mixed together with extra virgin olive oil to form a creamy emulsion. We’ve also added a touch of Dijon mustard to give a little more zing and to help the creamy dressing stay emulsified. Here’s how to make this balsamic vinaigrette:

  • Whisk the ingredients in a medium sized bowl. In order to get the oil and vinegar to incorporate well, use a medium-sized bowl to allow for enough movement of the whisk. First, whisk the balsamic vinegar, Dijon mustard, maple syrup, and salt.
  • Add olive oil gradually. The other tip for reaching an emulsion is adding the olive oil little by little. We typically add it tablespoon by tablespoon and whisk in between until the oil fully incorporates.
  • Use mustard. Interestingly, the Dijon mustard also helps to form and lock in the emulsion. This technique works in a few other vinaigrette recipes, like our Classic Vinaigrette and Italian Dressing.
How to make balsamic vinaigrette recipe

Types of balsamic vinegar

There are lots of types of balsamic vinegar at the store, and they vary widely in quality. After some research, we found there are three categories of balsamic vinegar:

  • Traditional balsamic vinegar, aka aceto balsamico tradizionale. This type of balsamic is aged 12 to 18 years, and has a very thick, syrupy texture. It’s the highest quality and most expensive. It’s not necessary for this recipe.
  • Commercial grade balsamic vinegar, aka balsamic vinegar of Modena (IGP) or aceto balsamico di Modena. Type is aged less than 12 years and has a developed, tangy sweet flavor. Try a commercial grade balsamic for this recipe if you can find one!
  • Condiment grade balsamic vinegar is the lowest grade. It has a thinner texture that’s more similar to other types of vinegar. The flavor varies widely on the brand. Very cheap brands can use sugar to mimic the sweetness of grapes, so look for bottles with ingredients that are only grapes or grape must.

A good rule of thumb for buying a good balsamic: look for a mid-priced bottle. Price is typically indicative of quality!

  • 1 tablespoon maple syrup (or honey)
  • ¼ teaspoon kosher salt
  • 6 tablespoons olive oil

Instructions

  1. In a medium bowl, whisk together the balsamic vinegar, Dijon mustard, maple syrup, and salt until fully combined.
  2. Gradually whisk in the olive oil, adding 1 tablespoon at a time and whisking until it incorporates, until an emulsion forms.* Serve immediately. Store refrigerated and bring to room temperature before serving (keeps at least 2 weeks).

Notes

Taste, and if you prefer a sweeter balsamic vinaigrette, you can add up to 1 tablespoon additional maple syrup.
