That classic combination of tomatoes, cucumbers and feta in a Greek salad is simple yet a revelation at the same time. For this Greek salad dressing, we wanted to capture the simplicity of the flavors and approach to life in this sun-drenched country. It’s zingy, lemony and altogether the perfect versatile dressing for salads of all kinds. Here’s how to make it!
Ingredients for Greek salad dressing

The ingredients are usual suspects of a Mediterranean-style vinaigrette recipe:
- Olive oil: Extra-virgin olive oil is the basis of this healthy dressing.
- Vinegar & lemon juice: This dressing uses two types of “acids”: both red wine vinegar and fresh lemon juice, which make regular appearances in Greek cuisine. Using both gives an added complexity.
- Dijon mustard: A touch of Dijon mustard to gives a little more zing.
- Oregano: The main flavor herb-wise is dried oregano. It’s also very common in Greek cuisine and gives it that Greek flair.
How to make the perfect emulsion

- Use a medium sized bowl. Don’t use a small bowl! A medium-sized bowl allows for enough movement of the whisk. (Trust us, we’ve done it in small bowls before and it’s almost impossible to get the oil and vinegar to meld.)
- Add the olive oil gradually. The other tip for reaching an emulsion is adding the olive oil little by little. We add it tablespoon by tablespoon and whisk in between until the oil fully incorporates.
Storing Greek salad dressing
In this Greek salad dressing recipe, the olive oil and vinegar do tend to separate after the initial whisking and during storage. This is okay: simply whisk again before serving! This Greek salad dressing is a simple oil and vinegar dressing that comes together in less than 5 minutes: the perfect easy vinaigrette for salads.
Ingredients
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon onion powder
- 1 teaspoon dried oregano
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 6 tablespoons olive oil
Instructions
- In a medium bowl, whisk together the red wine vinegar, lemon juice, Dijon mustard, onion powder, oregano, kosher salt and black pepper.
- Gradually whisk in the olive oil, adding 1 tablespoon at a time and whisking until it incorporates, until an emulsion forms. Serve immediately. Store refrigerated and bring to room temperature before serving (keeps at least 2 weeks). The dressing may separate after sitting which is ok; simply whisk again before serving.
