You know love French fries, but have you tried…avocado fries? They’re crispy and crunchy, a little tangy, and full of rich avocado flavor. Ideal for mixing up your side dish routine! When Alex introduced this concept to me, I was a little wary. They seemed like one of those trends that isn’t as good as it sounds. But count me a convert, because these crispy numbers are absolutely irresistible! They’re high in good fats and a healthy alternative to the standard fry. (Plus, you can eat them in tacos.) Here’s how to make them!
Ingredients in avocado fries…and the perfect avocado
There’s a short list of ingredients for these avocado fries. Even better, they’re vegan! Instead of dredging them in egg like most breaded recipes, we used oil to get all the coating and stay plant-based. Here’s what you’ll need, and what to look for in your avocados:
- Avocados: here’s the most important part! Make sure your avocados are ripe but still firm. You don’t want mushy avocados, because they don’t hold up to the breading process.
- Flour: you can use any type, even gluten free
- Panko: you can find gluten-free panko online if necessary
- Spices: oregano, garlic powder, and chili powder
- Salt
- Lime juice
- Olive oil
How to make avocado fries: basic steps & tips!
Making avocado fries has the same basic steps of most breaded recipes. Here’s what you’ll do, and a few tips along the way:
- Lightly coat the avocado slices in flour and spices. This allows the next ingredients adhere to the slices instead of sliding off.
- Dip the slices in oil and lime juice. This provides the liquid for the breading to stick.
- Coat the slices in panko. Then dip the avocado slices into panko.
- The panko will get gummy from the flour and oil, so refresh as needed. Continue to replenish with fresh panko to get that lovely crispy exterior.
- Bake for 15 minutes at 425 degrees. You don’t even need to flip!
What’s panko?
Ever worked with panko? Panko is a flaky bread crumb mixture used in Japanese cooking for fried foods. It’s also made its way into international cooking because it’s the perfect breading when frying…or these baked avocado fries! Panko is available in most grocery stores; if you can’t find it, look for coarse breadcrumbs instead (or make them!). Some purchased breadcrumbs have very fine texture, which wouldn’t end up quite as crispy as panko.
The safe way to slice an avocado
Cutting an avocado requires pitting it, and sometimes that can be a little dangerous if you don’t have the right knife skills. Here’s how to slice an avocado…the safe way!
- Slice around: Using a large chef’s knife, cut lengthwise around the avocado. Twist the two halves to separate them.
- Pit holding a towel: Place a towel in your hand and put the avocado on top. With a gentle but quick motion, tap the knife into the avocado pit.
- Use our safety trick: Do not attempt to remove the avocado pit with your hand! Instead, pull the cutting board close to your body, then place the pit against the far edge of the cutting board and pull back to release it from the knife. (Watch the video below for this part!)
- Scoop out and slice: Use a large spoon to scoop out the avocado from the peel. Place the avocado with the cut side down, then cut it into slices. To dice the avocado, turn the slices and cut crosswise to make diced avocado.
Dipping sauces for serving
Once you’ve made your avocado fries, it’s time to dip! You definitely don’t need a dipping sauce, but it does amp it up a bit. Here are a few sauces we recommend for serving (for a vegan appetizer or vegan side dish, use vegan mayo):

Ingredients
- 2 avocados, ripe but still firm
- ½ cup flour
- ½ tablespoon dried oregano
- ½ tablespoon garlic powder
- ½ tablespoon chili powder
- 1 teaspoon kosher salt
- 2 tablespoons fresh lime juice (1 lime)
- ⅓ cup olive oil
- 1 cup panko
Instructions
- Preheat the oven to 425 degrees Farenheit.
- Add the flour, oregano, garlic powder, chili powder, and kosher salt to a bowl and stir to combine. Pour it onto a plate.
- In a bowl, stir together the lime juice and olive oil.
- Add ½ cup panko to a plate. Set up an assembly line with the plate of flour, then bowl of oil, then plate of panko.
- Cut the avocado into slices about 3/4-inch thick (you’ll get about 16 total).
- Dredge each slice in the flour. Then dip it in the olive oil mixture and tap off excess into the bowl. Gently press it into the panko to coat it well. Lay the slice on a parchment lined baking sheet. Repeat for all the slices. When the panko starts to get gummy, refresh it with the remaining ½ cup dry panko.
- Bake 12 to 15 minutes until golden. Serve warm, with a dipping sauce as desired (see above for ideas).
